Kids’ Party Drinks, the best intentions …

And as the story usually goes – to tell it all honestly – it all started in the autumn of 2017. Since all three of the company’s partners had little kids at the time, we decided enough was enough. Those so-called “kids’ champagnes” (a terrible name, by the way) filling the shelves were nothing but foreign-made, packed with chemicals, and produced from the lowest-quality concentrated raw materials in the world. Horror, cubed!

So we rolled up our sleeves. We decided to make children’s party drinks from Estonian ingredients – berry-rich, made from real juice, unrefined sugar, and crafted semi-dry.

We produced 5,000 bottles of one drink and 5,000 of another. Blueberries, raspberries, strawberries, apple juice, rhubarb juice… We were thrilled. Labels were ordered from the print house, and we were ready for a big success.

Until… the final lab analysis revealed that during fermentation, our winemaker Martin had accidentally left just a trace of residual alcohol in the batch. A work accident, oh dear…

By law, we could have still launched the drinks on the market. But when we asked ourselves, “Would you serve this to your little daughter or son?” the answer was clear – No go!

But three years later, looking at the store shelves – still filled with those awful, chemical- and sugar-packed monstrosities – we just couldn’t stay on the sidelines any longer.

We took children’s preferences into account, listened carefully to parents, tested different recipes, sugar levels, and all sorts of other details for a whole year. Typically, our different products are located in various spots in stores, not all together on the same shelf.

The popular MULL° NULL series of non-alcoholic drinks in champagne-style bottles can be found on the shelf labeled NON-ALCOHOLIC DRINKS. This shelf or section is usually near or next to the alcoholic beverages.

Sparkling wines are easier to find – you’ll find them with the other sparkling wines. The new and especially tasty rhubarb wine is located on the white wine shelf.

Ciders are placed together with other ciders, usually near the beer section.

Our secrets on a timeline

How did it happen that in just ten years we gained so much experience and wisdom that we can now produce Estonia’s most popular non-alcoholic MULL° instead of those first sour and awful ciders?

To be completely honest, those first homemade wines and ciders were of terrible quality. Very sour and unpleasant drinks.

YEARS OF EXPERIMENTATION
Lots of books bought from Amazon and elsewhere, and plenty of experimenting… After working through a stack of cider manuals ordered from all over the world and with stubborn persistence, things finally started to take off. Martin slowly began receiving praise, and at events where he sold his drinks, everything was snapped up almost immediately.

IMPORTANT DECISIONS
At the beginning of 2016, Lauri decided to leave his full-time job to spend more time with his family and stay in Estonia. And that’s exactly what he did. But in reality, he dove headfirst into the exciting world of beverage production. At the start of 2015, a partnership was formed and the decision was made to produce a larger batch of craft cider, ready to be boldly introduced to the market.

2016

RESTAURANT RACE
In the spring, CITY CIDER 2015 dry/semi-dry/with strawberry ciders were born. We made them using the facilities and equipment at Raasiku Brewery. The ciders quickly received a warm welcome from retailers (Prisma was the first supermarket chain to put our ciders on the shelves). Restaurants raced to add our ciders to their drink menus—the first being Estonian Burger Factory, the very first place in Estonia serving craft burgers.

BLACK CURRANT CIDER
The first cider made using the traditional method in a champagne bottle was born: City Cider – Black Currant Cider.

BIRTH OF THE FAMOUS VOODOO
The first batch of Voodoo ciders was crafted. Voodoo cider is an Estonian tannic apple cider aged and matured in authentic Jamaican rum barrels. Significantly stronger and more extreme than our other ciders, Voodoo is a drink you either love or hate.

ALCOHOL-FREE CIDER
In the summer, Estonia’s first alcohol-free cider was created. It is the country’s only true craft cider made entirely from local Estonian apples. The process is a bit tricky, as we take regular cider and gently remove the alcohol, leaving behind a fully authentic-tasting, alcohol-free Estonian cider.

We diligently bottled our creations in our new facility and perfected the drinks. Over the course of a year, we produced just over 100,000 bottles of these extraordinary beverages.

VOODOO REBORN
The VOODOO cider is reborn, this time in a luxurious and festive champagne bottle. We source authentic Jamaican rum barrels, previously used to age strong rum, and let our slightly shy Estonian cider mature in them for 3–4 months—voilà, Voodoo is born. A bold Estonian cider with a subtle hint of genuine Jamaican rum. Not an easy-drinking beverage, but undeniably a gourmand’s favorite.

We ended the year on an optimistic note, suddenly realizing that we had become one of Estonia’s largest craft beverage producers, fully in the premium league. Over the year, we experienced surprises and grew to record heights. In our factory, we produced 200,000 bottles. We export to both Finland and Australia.

Why is craft cider good for you?

Estonian craft cider – what is it?

The history of Estonian craft cider and cider-making is quite fascinating. By the beginning of 2015, when we finally mustered the courage and made the definitive decision to start producing Estonian cider, it was clear that we wouldn’t be the first. Rumors were circulating that Jaanihanso was already close to creating some kind of factory-style operation, and reportedly, the first bottles were already waiting to hit the shelves. Well, what could we do… We got in touch with Alvar and visited Jaanihanso in Pärnumaa. We exchanged lessons on cider-making, listened to his story, picked up some of the best ingredients, and drove back to Tallinn with a clear understanding: we were soon going to become cider makers in Estonia!

The juice needed for craft cider can only be made in Estonia once a year—when the local red-cheeked apples are ripe in late autumn.

The best cider apples, however, are actually small, tart, stubborn little fellows that aren’t suitable for eating. Luckily, by early November, plenty of these apples can be found scattered under trees across Estonia.

MULL° ciders are free from chemicals and contain only minimal residual sugar. Today, they come in both smaller bottles and elegant champagne-style bottles.

More and more people now hear the word “cider” and think of MULL°, Jaanihanso, or some cool local estate crafting their own quality home-made cider.

Increasingly, people are realizing that 100% apple juice, naturally fermented and nearly sugar-free (and, by the way, delicious) is not only sensible but genuinely awesome in moderation.

More and more, instead of grabbing imported prosecco or cava from the store, folks are reaching for Estonian “prosecco.” And what’s really great is that young people tend to prefer alcohol-free cider over alcoholic versions.

Why is craft cider good for you?

The word “cider” is used only for beverages fermented from apple juice. So, a classic cider is an alcoholic drink made from apples, specifically apple juice.

The taste of craft cider depends mostly on the apples. In Estonia, craft cider is made mainly from eating apples. In Spain, France, and the UK, however, cider is made from special cider apples that are not suitable for eating. In our climate, there is little sun, so the apples tend to be tart with thin skins, making the cider pale yellow in color, light, and fresh in taste.

We usually harvest cider apples only from old, abandoned collective farm orchards, where the only fertilizer for the trees is the lovely cow manure scattered beneath them.

Nothing is added to our cider except 100% apple juice. That said, a warm warning: alcohol can be harmful to your health. We recommend drinking little, but drinking well, with quality and benefit in mind.

Apple is good for:

1. The heart.
Apples don’t contain a huge amount of digestive fiber, but the fiber they do have forms a beneficial combination for health. This helps regulate blood lipids (fats), lowering the risk of heart disease and supporting overall cardiovascular health.

2. Muscles and skin.
Apples contain almost all essential nutrients, including various minerals and vitamins. They are rich in potassium, which is vital for muscle function. MULL° ZERO non-alcoholic Barbara is our bestseller. This drink is made primarily from rhubarb juice with 1% beneficial aronia juice. Why 1% aronia? Because we want the drink to have a pleasant pink hue, and since we don’t use food colorings (read: chemicals), the only way to naturally color the drink is through the ingredients themselves.

MULL° ZERO non-alcoholic Rose is a hugely popular drink. It features a well-balanced blend of apple, rhubarb, and strawberry juices. The real juice content is 50%, with the rest being water to balance the drink. Raspberry = MULL° Scandalous Raspberry

Scandalous Raspberry was born in 2020, when Kroonika magazine and Ekspress Grupp asked us to create a festive and delightful sparkling wine they could pour in streams at their glamorous events. The result was so good that we decided to ask Selver and Rimi to put it on their sparkling wine shelves, so everyone could get a taste of the scandal we bottled. This raspberry sparkling wine is semi-dry and a wonderfully light, summery, and celebratory drink. As far as we know, the young lady with bare legs on the label hasn’t stopped any men from putting it in their shopping cart—but of course, it’s absolutely a favorite among our beloved women.

Estonian craft cider. How is our cider made?

Cider Production

To make cider, you need natural apple juice, which makes the very first and most important step the careful selection of apples. The apples used for cider must be fresh, grown as naturally as possible, and properly ripe. These principles are strictly followed in the production of MULL° ciders. Unfortunately, not every apple can make good cider.

It’s crucial that the apple has the right balance of natural acidity, sugars, tannins, and aromatic compounds. Sugar provides the alcohol, acidity gives freshness, tannins contribute the body reminiscent of red wine, and aromatic compounds add unique character. These qualities depend on the apple variety, the growing region, and cultivation methods.

Cider-Making Traditions

In traditional cider-producing regions like England and France, the climate is milder than in Estonia. As a result, the apples there are sweeter, less acidic, and contain more tannins. Over decades and even centuries, specific apple varieties have been cultivated for cider production in these regions. Estonia, however, does not yet have a fully established cider culture, which leaves more room for experimentation. MULL° has made it its mission to help create and popularize Estonia’s cider culture.

There is practically no single apple variety with all the ideal characteristics for cider production. That’s why different apple varieties are blended to achieve a balanced and complex taste. In making our ciders, we use over ten carefully selected apple varieties, so a particular bottle may contain a mix of Antonovka, Auksis, Kuldrenett, Cortland, and more.

Making MULL° Cider

Of course, to make cider, you first need to extract juice from the apples. Many of us probably spent chilly autumn evenings in the countryside at our grandmother’s, crushing apples and pressing out the juice. Making cider juice isn’t much different from that. Nowadays, there are various machines to make this process easier, but it wasn’t always so simple. The very effort required to get juice from apples is one reason cider doesn’t have as long a history and tradition as grape wine. Depending on the variety, one kilogram of apples yields about 0.5–0.7 liters of juice.

The cider master’s task is to guide the fermentation process in the desired direction.

Cider is made from apple juice through fermentation, and the “main culprit” in this process is the yeast living in the juice. If your juice is in a jar at home, you might notice the lid “puffing up” on a three-liter jar—this is a sign that the yeast is active, especially if the juice hasn’t been sufficiently pasteurized. The yeast multiplies and consumes the sugar, producing alcohol, CO₂, and other compounds. Roughly, one gram of sugar creates about half a gram of alcohol and an equal amount of CO₂.

However, fermentation doesn’t always turn juice into a tasty cider on its own. To achieve consistent results, most cider makers use cultured yeast, which eliminates unwanted microorganisms and ensures healthy fermentation.

Cider makers generally follow one of two approaches: some prefer spontaneous fermentation (wild yeast), while others use controlled fermentation with cultured yeast. The fermentation process can take anywhere from a week to several months, depending on temperature and juice characteristics. The highest-quality cider comes from slow, steady fermentation in a cool environment. Fermentation ends when all the sugar in the juice has converted into alcohol.

 
How do you turn cloudy, fermented apple juice into a high-quality cider that’s lightly sweet, bubbly, and clear?

There are several methods for this. The most traditional is the methode champenoise, where the raw cider is bottled into 0.75 L bottles and allowed to ferment again with a little sugar and yeast. The fermentation produces CO₂ in the bottle, but also leaves behind sediment. To remove this, the bottles are placed upside down on special pupitre racks and gradually rotated and tilted over several weeks so that the sediment collects near the bottle’s neck. Then the necks are frozen, and the frozen sediment is removed along with the leftover fermentation byproducts.

Sugar is added to the cider remaining in the bottle if a sweeter drink is desired, along with any necessary preservatives, and the bottle is sealed with a mushroom-shaped cork. This is the traditional method used for making Champagne and cider, especially in France, for hundreds of years.

The second, more common method is the charmat method, where raw cider is fermented again with a little sugar and yeast in a large stainless steel tank. After several weeks of natural fermentation, the naturally carbonated cider is filtered under pressure, sweetened to taste, and bottled. This results in a crystal-clear cider with a clean, fresh flavor.

Just like wine, cider develops its best qualities after several months of aging.
